I bought a brisket from the supermarket last week with the intentions of cooking it for Thanksgiving. I pull it out the fridge and the sell by date says 11/13. There is no way this is still good right? I thought briskets lasted longer than that after purchasing and I am really ticked at myself for letting it go bad

It's been in the fridge uncooked the entire time?

What temp setting do you have on your fridge? cold cold? just cold?

I'll bet it's good. IWCAEI (I Would Cook and Eat It)

I keep my fridge pretty freaking cold. I may cook and eat it myself. I don't want to take a chance on getting everyone sick on Thanksgiving. If i'm not back to post tomorrow ya'll'll know what happened.

I would have thrown it out too. Sour cream is cheap and dairy goes south pretty quick when it's left out.

My dogs have never complained once about dated meat I feed to them.

You'll be fine. This isn't THAT far out of the date range.

Expiration dates are really more of guidelines anyway. True story, when I was a kid I used to think that bacteria were collectively intelligent and read expiration dates and waited until after that date to invade and spoil.

I was wrong.

1.) brand new as is unopened, or brand new as in you JUST bought it, opened it to get some, and forgot to put it away?

2.) was it left out on the counter in your 72 degree kitchen, or outside in the 30-40 degree car (depending on your location, obviously. it was 20 here last night)

3.) who the frick gets sour creme in a bag? I thought it only came in tubs?

It's fine. That sell by date is only on there for retail purposes.

Google "wet aging beef". My dad does this all the time with whole tenderloins and ribeyes. I believe the key is to leave it unopened in the vacuum packaging. It is unbelievable how tender it gets!

You were right to toss it. One of my cardinal rules. DDFA (Dairy Don't frick Around).

If that brisket is in original cryovac and has never left refrigeration for more than a few minutes, it should be good for a couple months. Competition brisket smokers intentionally wet age their briskets for anywhere from 30-90 days.

Yep. The BBQ writer at Texas Monthly has cooked them after six months, even a whole year, just sitting in the fridge in cryovac. The year old one was gross but not deadly.

It will still be good this time next week and the week after that and probably the week after that. Hell those things are probably 2 months old and frozen solid, another couple weeks ain't gonna hurt nobody.

If kept at the bottom part of your fridge it can still be okay 6-8 weeks past the date.

Aged beef if awesome.
