I usually use whatever is left over in the fridge. This morning I crumbled a burger patty from last night and add chopped red onion, fresh jalapeño, and 2 craft singles for a cheeseburger omelet.

If no leftovers, I'll usually pan fry some bacon and throw that in with shredded cheddar or whatever cheese we have on hand and diced onion and bell pepper. Mushrooms if we have them go in too sometimes.

Gotta have real eggs and it can't be brown. If I catch a restaurant trying to sell me egg beaters I'm out.

My omelets mainly consist of leftovers and what vegetables are floating around in the fridge. And often times they inadvertently come out as loaded scrambled eggs. Not sure what that says about my character.

The crawfish tails and cheese sounds like something I would like as well.

If I had to guess, what he was talking about wasn’t necessarily what one puts in their omelet but the technique. French style which the pan and eggs are agitated to a tremendous degree and then rolled towards the backside of the pan with hardly any browning. Or heaped onto a flattop and browned heavily in the American style.

Of course that’s like saying there are only two types of people in the world...

Nothing beats making an omelette the morning after a large holiday feast and using all kinds of crazy leftovers in the omelette. I think the best was the omelette I made after we had the feast of 7 fishes one year.

Ive made both of those and love them. Adding de-cased boudin is always a good idea too. And my omelets are far from brown and dry.
