The "Viet Cajun" Crawfish Craze

Tried it..it's good but not really ground breaking. Tastes like BBQ shrimp except with crawfish. Way more of a mess and expense.

But now people are saying "new orleans style" crawfish and BS like that as if we are at a turning point with "styles" of boiled crawfish.

I'm skeptical about all this hooey (but not calling total BS because it does taste good), anyone tried "Boil" yet? The place where they serve them and used to be Louisiana Music Exchange on Magazine and Louisiana.

The viets in NOLA wont make em this way. They say the right way to make them is the cajun way.

Its the viets in Houston that started this trend.

Yes, and there is a pop up at Urban South who does them too.

I haven't been to Boil but have walked by many times. I don't care how you cook them I'm not paying $10 lb.

And it was Korean who ranted about it on a show and is probably going to be the catalyst for its growing popularity..

Urban South is where I tried it. I do like it but not enough to throw in the towel on good boiled crawfish for damn sure.

It's good, but different. I don't even consider them the same product as regular boiled crawfish. Completely different flavor profile.

It's like comparing gumbo and beef stew. Both are thickened stock with protein and veggies but they taste nothing alike.

Exactly, I dont mind having it now and then but Im not turning my nose up at some good berled crawfish!

I tried it at the Crawfish and Noodles in Houston that was featured in Ugly Delicious. I thought it was great but a more subtle difference than expected, and I liked it better than the only restaurant boiled crawfish I’ve had this season. The really surprising thing was when I went to check out and found out that the market price turned out to be $11/lb.

If you live in houston, boil house is the best restaurant crawfish I've ever had outside of Louisiana. It's damn good.

I agree with this. It’s not a replacement or better/worse method, just a different want to make the same protein. I don’t understand wanting to eat something prepared JUST one way and one way only.

But I’ve had both with different methods and seasonings. I have a preferred method but that doesn’t mean I’m dead against other ways. Dumb comparison.

I am pretty sure I first saw this on a show where they were filming in Las Vegas or somewhere out west. They had different flavors and it was tossed in minced garlic and sort of a wing sauce.

Smoke
Sous vide

All different. You don't have to throw out the absurd boiling to try to make your incorrect point.
