the tomato & feta pasta recipe

i am late to this party i guess...but i know some of you have (probably prompted by a wife or GF who saw it on social media) made it or eaten it.

you roast a pan of cherry tomatoes with a block of feta in olive oil, them mix it into a pot of cooked pasta. i added crushed garlic cloves, crushed red pepper, a sliced red onion, and a bunch of herbs to the roasting pan. i also added some cooked hunks of pork sausage when i mixed it all up.

my god, its good. shockingly good, and couldn't be easier. the leftovers are good cold too, like a pasta salad

My 13 year old niece made this several weeks ago. She added shrimp, it was delicious.

I have a bunch of cherry tomatoes on my counter- might give this a shot tomorrow- I bet it would be great with shrimp and a splash of balsamic vinegar.

yes, mostly.
i let it a little chunky. mix in a ladle of the pasta water and kinda fold/toss until its the texture you like
