I understand the name implies that they are middle eastern, but how is the food they are selling any different than Greek/Lebanese. Is it only how they season the meat? Halal seems almost identical

I do think it’s weird they use the term gyro and not shawarma

this is where the real confusion lies...not in the name of the restaurant but the fact that they call their primary dish "Gyro", which is Greek. Halal can mean anything and doesn't necessarily require that the food be "middle-eastern", but the use of "Gyro" doesn't make a lot of sense.
The Halal Guys in Atlanta is always busy and I haven't noticed their meat to be overly dry, but that might also be because there is a ton of greasy rice in the platter lol. They just came out with this spicy lamb meat to go with the gyro and chicken options and it's fairly tasty as a fast food option.

Exactly and this proves my point for me. When Halal Guys was announced to be opening here, I looked at the menu and said "this is a stripped down version of Albasha...why would I go here?"
Factor in crappy food and this place had no shot.

The owners have tried bringing various chains to Louisiana, with some successes and some failures. I believe they also own BWW and Smashburger.

Albasha Express on lee has some very salty chicken. First time was practically inedible and the second was still too salty but better.
Everything else is very good

I've only been to the one in Gonzales (Airline) once and it tasted okay, but to do so I could drive to the main restaurant in Gonzales on Highway 30, where I go for lunch at least once a week. Consistently good.
