Not a terrible list, but, as with all things subjective, it's definitely debatable. Some points more than others.
Le Madeline? That's a strange addition to the list, IMO. Perhaps the topic of "Best Restaurant" versus, "best breakfast restaurants", or "best bakeries" is just too broad, but Le Madeline doesn't make it on my top 10, or probably top 20.
Panchitas - There is probably no other style of "ethnic food" than Mexican that generates such divergent opinions. Panchitas is a prime example of this. I find their food practically indigestible, much less palatable. I don't give two shakes if it's more "authetic" Mexican than another restaurant. I know when something tastes bad, and Panchitas is bad food, IMO. Besides the fact that the location is unsuitable for that type of restaurant. The seating is limited, the kitchen heat and smells waft thru the tiny dining area, filled with immensely heavy log-roll chairs, and a sidewalk also too tiny for comfortable seating.
Cafe Nino is a hard one for me. I do like the food, and the pizzas are top notch (at their best, but every pizza joint serves duds now and then; crust is old, etc). However, Nino simply has to fix up that place before I would consider placing it in my top 10. How it passes inspection is a mystery. It's simply too nasty in there for me to consider bringing a guest or even my children to dine in. It's a "take-out only" place for me.
I've never been to Chill Out Cafe, but as a new place with "a spectacular coupling of American breakfast and Thai taste!", I'd have a hard time putting it on my top ten. I've been to Singha a block away, and thought the Thai food there was pretty damn strong. My preference is to keep my breakfast food and thai separate.
The other restaurant's you mentioned are all solid, and I'd probably include them.
My Top 10 for Carrollton would also include:
Cote Sud
Jacques-Imos (suck it, haters!)
Louisiana Pizza Kitchen
Matt and Naddies
Fat Hen and/or Squeal

Sorry, but I respectfully disagree with you on this one. The Doc Brinkers Special, which perhaps does not technically qualify as a burger, is beyond great. Pair it with an orange or chocolate-cherry freeze, and you have a combo that's tough to beat.

It is more polished than La Profecia and the rent is certainly higher. Your point is valid. The food is solid though.

I don't have many complaints about the food. Would never order the filet there again though. It was a special one night and I ordered it. Terrible.

I think I'm going to go on a rant of the use of solid, legit, balls, tits, etc. I get tired of reading it. I'm probably in the minority.

Yeah that's what I usually get
Although I haven't been in a while. The last few times I was in the mood for papusas I went to Mondo. They're great there. I don't know if they still have them as it was a seasonal item of sorts.
I do think it's funny that the server at Macarena always tells you that the tea isn't sweet but there is sweetener on the table. Then you take a sip of it and it is so sweet that you have to dilute it with water.

Matt and Naddie's isn't very good to me. JImo's is okay but a little overpriced and feels too much like a tourist restaurant. It's a restaurant that feels far too superficial, like a restaurant owned by someone not from New Orleans who wants New Orleans to be what he thinks it is. Honestly, it has the feel of a chain restaurant; it's inauthentic. And though the food is good, I can't get over that inauthentic atmosphere. Camellia Grill and Port of Call are perhaps the two biggest mysteries to me. I do not understand why anyone in New Orleans likes either place. Perhaps it is my own shortcomings, but I find the food at both repulsive.

I don't get the hype surrounding Port of Call, either. Camellia Grill, however, is a different story. That Doc Brinkers Special is otherworldly.
