Thought I would start a Thanksgiving thread where we can all offer some side dishes we like....I will start off with

Cranberries with orange zest in Port Wine

Servings: 10
Yield: 4 1/2 cups

Notes: The cooked cranberries will store at room temperature for up to 2 days.

1 cup port wine
6 cups fresh cranberries (1 1/2 pounds), picked over and rinsed
1 1/2 cups sugar
2 tablespoons orange zest, finely chopped
1/4 teaspoon salt

1. In large skillet, bring port to boil over high heat. Add cranberries, stir and cook till they begin to pop ( about 5 min.).

2. Add sugar, orange zest, and salt. Stir and cook till sugar is dissolved (3 to 5 min.). Let cool and serve

As an app, I am doing deviled red beat eggs, chargrilled oysters, filet mignon canapes and ....not sure.

Sides are still churning in my head.

Tim's Pea Salad

1 cup celery, chopped
1 cup green onion, sliced
1 cup sliced almonds, roasted
1 cup pecans, roasted
1 pound bacon, crumbled
4 tablespoons mayonnaise
4 tablespoons sour cream
1 teaspoon dill
1 teaspoon basil
1 teaspoon oregano leaves
salt and pepper
3 10 ounce packages frozen peas , rinsed and drained
1 cup swiss cheese, shredded
1 cup cheddar cheese, shredded

1. Toss all ingredients together while peas are still frozen. Refrigerate for at least 1 hour.

2. Serve in dish lined with lettuce leaves.

First kid? They are easy at that age. I would go all out while you can. It starts to get hard when they are 3.

I think I'll have a nice celebratory dinner the night he's born and Mom is resting.

there's a great place just a few blocks away...get a nice bottle of wine...steak....I just won't tell Mom

Bless her soul, my Mom made the best oyster artichoke soup. Now I just need to find her recipe.

Corn Pudding
sweet potatoes
Cranberry in the can

I am tired of it all.

My recipe is similar, but I use grand marnier. I refrigerate it until the big day and then let it get to room temp.

Double Corn Pudding

3 tablespoons unsalted butter
6 green onion, chopped
6 6" corn tortilla
5 large eggs
2 large egg yolk
1 1/2 cups heavy cream
1 1/2 cups milk
2 1/2 cups (13 oz) frozen corn, thawed

1. Butter 8x10 baking dish and line with tortillas. In large bowl, whisk eggs with yolks. Add cream and milk and whisk to blend. Stir in onions, corn, 2 tsp salt, and 1/4 tsp pepper. Pour custard over tortillas and refrigerate overnight.

2. Bring dish to room temperature and preheat oven to 325. Place casserole dish in roasting pan. put enough water in roasting pan to cover 1/2 casserole dish. Bake corn pudding in water bath till just set (about 1 hour). Let stand for 10 min. before serving.

Rosemary Bread
Ingredients
1 tablespoon yeast
1 tablespoon sugar
1 cup warm water
2 1/2 cups flour
1 teaspoon salt
2 tablespoons rosemary
2 tablespoons butter
Directions
Place yeast, sugar and water in large bowl or food processor and allow mixture to become bubbly.

Mix in 1 T butter, salt, and 2 cups of flour.

Add one tablespoon of the fresh chopped rosemary.

Knead for about 10 minutes by hand or in food processor about 5 minutes until smooth and elastic.

Add more flour if necessary.

Oil a bowl, put dough in it and cover with a towel.

Let dough rise in a warm place for one hour until doubled.

Punch down dough and divide in half.

Let dough rest about 5 minutes.

Spray baking pan or cookie sheet with cooking spray.

Shape the dough into 2 small rounded oval loaves.

Sprinkle remaining 1 Tablespoon of rosemary over the loaves and press lightly into the surface.

Let loaves rise again until doubled, about 45 minutes.

Preheat oven to 375¢X F.

Bake for 15 to 20 minutes, until lightly browned.

Carefully remove from oven, brush with remaining butter (and salt if desired.).

shrimp and cheese squash

2 teaspoons Creole seasoning
1 tablespoon white worcestershire sauce
1 clove garlic, minced
1 cup mozzarella cheese, grated
1 cup cheddar cheese, grated
1 large egg, slightly beaten
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup green onion, chopped
4 medium yellow squash, sliced
1 medium onion , chopped
3 tablespoons butter
1 9" pie crust, baked
salt and pepper
tabasco sauce

1. Saute, in butter, onions and garlic till soft. Add creole seasoning and squash, cook till tender. Add shrimp. Remove from heat and add green onions, sour cream, mayonnaise, Worcestershire sauce, and egg mixing well.

2. Mix cheeses and put half in pie crust. Pour in veg mix and top with remaining cheese.

3. Bake in 350 oven for 25 min..

Sweet Potatoes

Servings: 12

Notes: The sweet potatoe mixture and topping can be refrigerated separately for up to one day. Bring to room temperature before proceeding.

5 pounds sweet potatoes (about 10)
1 stick unsalted butter, cut into pieces
2/3 cup granulated sugar
1/2 cup light brown sugar
1/2 cup honey
2 teaspoons vanilla extract
1 3/4 teaspoons salt
3/4 teaspoon freshly ground nutmeg
3 large eggs, slightly beaten
2 1/2 cups milk , hot

TOPPING:
1 cup flour
1 cup light brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon freshly ground nutmeg
1/4 teaspoon salt
1 stick unsalted butter, chilled and cut into 1/2" cubes
1 cup pecans, coarsely chopped

1. MAKE SWEET POTATOES: Preheat oven to 350. Spread sweet potatoes on baking sheet and bake for 1 1/2 hours till tender. Let cool 10 min. then peel.

2. In large bowl, beat sweet potatoes at low speed. Beat in butter, sugars, honey, vanilla, salt and nutmeg and beat till blended. Add the eggs and beat on med. speed for 2 min.. Reduce speed to low and slowly add hot milk. Pour sweet potatoe mixture in buttered, 13x9 baking dish.



3. MAKE TOPPING: In a bowl rub together flour, brown sugar, cinnamon, nutmeg and salt. Cut in butter till texture of coarse meal. Stir in pecans.

4. Sprinkle topping over potatoe mixture and bake at 375 for 1 hour. Till topping is golden brown and crispy.

Nice thread.


Anyone have a good cornbread dressing recipe.

We never had cornbread dressing, its always rice dressing ( not that theres anything wrong with that). Just last year I thought some cornbread dressing would be good to. I did not really care for the results. I thought it could have been better.

I will post my Shrimp and Mirliton recipe later.

Southern Cornbread Dressing

serves 12

SOUTHERN STYLE CORNBREAD
2 cups yellow cornmeal (stone-ground)
2 teaspoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2/3 cup water, boiling
1 1/2 cups buttermilk
2 large egg, beaten
1 tablespoon unsalted butter, melted

Dressings
cornbread, cut into 1" cubes
2 cups dried french bread, cut into 1" cubes
4 tablespoons unsalted butter
2 medium onions, chopped fine
2 ribs celery, chopped fine
2 cups chicken stock
2 large eggs, beaten
1/4 cup fresh flat-leaf parsley, minced
1 tablespoon fresh sage, minced
1 tablespoon fresh thyme, minced
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper

1. Preheat oven to 450. Oil 9x13 inch baking dish and put in oven.

2. In a bowl, combine 1 1/3 cup cornmeal with sugar, baking powder, soda, and salt. Put remaining 2/3 cup cornmeal in heat proof bowl and add boiling water and stir well. Stir in buttermilk and eggs, then add dry ingredients and mix till blended. Pour batter into hot baking dish and bake 20 min. till lightly brown. Turn onto rack till cool. The cornbread will need to dry out for at least 2 hours before using in dressing.

3. DRESSING;

4. Spread out breads on baking sheet and let dry 2 to 8 hours.

5. Preheat oven to 400. Bake bread for 12 min. and transfer to bowl.

6. Melt butter in large skillet, add onions and celery and cook till soft (about 10 min). Add to bowl along with stock, eggs, and spices.

7. Butter 9x13 inch baking dish and spread dressing in it. Cover with foil and bake for 25 min.. Uncover and bake 20 min. till golden brown.


I use a hen to make my stock and throw the meat in the dressing also...If you like it a little more soupy...more stock.

I remember now I got the recipe last year from my ex-wife. I should have known better..
I ever mention she drove a broom.
