Mirliton & Shrimp Casserole

6 Mirlition
1/4 butter
1 cup onion, diced
1/2 cup celery, diced
1/2 cup bell pepper, diced
1/4 cup garlic
2 lb. 70-90 shrimp, peeled and de-veined
1/2 cup green onions
1/4 cup parsley
2 cups Italian breadcrumbs

Butter a large casserole and set aside.

Cut mirlition lengthwise and peel. Remove seed. boil in lightly salted water until fork tender. Drain and set aside. In a Dutch oven or large skillet, melt butter over medium-high heat. Add onions, celery, bell pepper and garlic and saute 3-5 min. Add mirlitn and blend into meat mixture. Cook until mirlitonis well blended and meat is tender about 30 min. Add shrimp green onions and parsley. Cook until shrimp and pink and curled, 10 min. Season to taste with salt and pepper. Sprinkle in breadcrumbs, 1/4 cup at a time to pick up excess moisture. Do not make mixture to bready. season to taste, Place in casserole dish and top with remaining breadcrumbs and bake until heated thoroughly and lightly browed, about 15-20 min. Serve as side dish or entree.

Day Before Mashed Potatoes
Ingredients

* 9 potatoes, peeled and cubed
* 6 ounces cream cheese
* 1 cup sour cream
* 2 teaspoons onion powder
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 2 tablespoons butter

Directions

1. Bring a large pot of salted water to a boil. Drop in potatoes, and cook until tender but still firm, about 15 minutes.

2. Transfer potatoes to a large bowl, and mash until smooth. Mix in the cream cheese, sour cream, onion powder, salt, pepper and butter. Cover, and refrigerate 8 hours, or overnight.

3. Preheat oven to 350 degrees. Lightly grease a medium baking dish.

4. Spread potato mixture into the prepared baking dish, and bake in the preheated oven about 30 minutes.

Crawfish and squash dressing

6 cups yellow squash, sliced
2 cups water
1 large onion, chopped
1 medium bell pepper, chopped
1 clove garlic, chopped
1 rib celery, chopped
1/2 cup butter, melted
1 large egg, slightly beaten
1 cup seasoned bread crumbs
1/3 cup parmesan cheese, grated
1 teaspoon beau monde seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper
1/4 teaspoon white pepper
1/2 teaspoon thyme leaves
1 pound crawfish tails, whole
tabasco sauce

Put water and squash in cast ion dutch oven and cook till tender. Drain in colander. In same dutch oven saute onions, garlic, bell pepper, and celery in butter till tender. Add squash and egg and stir. Stir in remaining ingredients and place mixture in greased 12x8 baking dish. Bake at 350 for 30 min.

Chocolate Caramel Pecan Pie

4 tablespoons unsalted butter
1 ounce semisweet chocolate
1 ounce caramel candy
4 large eggs, well beaten
1 cup dark brown sugar
3/4 cup dark corn syrup
1/4 teaspoon salt
1 tablespoon vanilla
1 1/2 cups pecan pieces
1 9" unbaked pie shell

1. Preheat oven to 400. Mix together eggs, sugar, syrup, salt, vanilla. Set aside.

2. Place butter, chocolate, and caramel in double boiler over moderate heat cover until partially melted. Uncover and stir till completely melted. set aside to cool slightly.

3. Slowly stir in chocolate mixture into eggs, sugar, etc mixture. Stir in pecans and pour into pie shell. Bake 10 min. then reduce heat to 325 and bake 40 min. more. Filling hardens as it cools.
