Thanksgiving 3 Day Croissants

So to take advantage of the time off, and create something pretty magical from scratch, I'm using a french 3 day croissant recipe I've used in the past.


Recipe (9 pages, filled with photos): Weekend Bakery (avid home bakers from Netherlands)

The end goal:




I've just completed Day 1:

DAY 1
Making the croissant dough
We usually do this part in the evening. Combine the dough ingredients and knead for 3 minutes, at low to medium speed, until the dough comes together and you’ve reached the stage of low to moderate gluten development. You do not want too much gluten development because you will struggle with the dough fighting back during laminating. Shape the dough like a disc, not a ball, before you refrigerate it, so it will be easier to roll it into a square shape the following day. Place the disc on a plate, cover with clingfilm and leave in the fridge overnight.

Ingredients for the croissant dough

500 g French Type 55 flour or unbleached all-purpose flour / plain flour (extra for dusting)
140 g water
140 g whole milk (you can take it straight from the fridge)
55 g sugar
40 g soft unsalted butter
11 g instant yeast
12 g salt

Other ingredients

makes 15

280 g cold unsalted butter for laminating
1 egg + 1 tsp water for the egg wash




From my experience, this recipe yields amazing results but you can't rush it. I tried the 2 day version last time, and they were a little bit flat and didn't get the crumb (bread term for the inside of the baked good) that I wanted.

I make naturally leavened croissants about every 2-3 years. That scratches the itch and I go back to buying them.

The recipe I posted doesn't have that much active time. And they taste look amazing.

This definitely isn't a weekly process though

So basically it's some bread with about 20 sticks of butter? No wonder I love those things so much.

I tried to sous vide 3 day croissants but it took me a couple of weeks.

For those of us that don't "gram", I don't see how that can be the correct recipe, although, I agree, it came direct from the link you provided.

In making a gram conversion, for example, butter; 40 grams. That's only 1.4 oz., but the images show a lot more than that.

*Okay, I'm an idiot that missed the 280 grams below that.

Laminated doughs are a wonder. Time consuming, sometimes difficult, but they sure do produce something special.

Sorry, yeah that's just the dough. 280 grams for the massive square of butter to stuff the dough with.

Also, for the butter they mention somewhere that you need to use at least 80% butter fat in the butter. We have some Amish style at the grocery that's 82%.

Yeah, we have some french butter in ours that's 84%. Too late to try this, and there a La Madeleine's French Bakery a quarter mile away that serves fresh croissants every morning that are heavenly, so I'm not really feeling compelled, know what I mean?

Those things are pretty fricking beautiful. The odds of my ever attempting that recipe are slim to none, but I would pay a decent bit of money for them fresh.

Didn't take photos due to everything else going on. Taste was great. Didn't have the perfect honeycomb but rose well.

I let them proof for too long due to the person cooking the turkey having issues.

Would make again for special occasions.
