Key tip with I probably didn't do effectively, keep the dough cold even if it means resting it before you're fun mushed rolling that stage.

If the butter warms up, it ruins the layers.

I’m gonna have to try these, I been doing the Alex the French cooking guys cheater method, but these look great.

I haven't achieved the crumb of the photo in the original post.

Keeping the butter cold is the key for that.
