Sweet and Spicy Chicken Bacon Lollipops....

So we're having people over tomorrow night and I'm smoking a brisket. Typically I throw some boudin on the grill for an app. Decided to look for something new on-line and found these on Hey Grill Hey. It's a lady's website out of TN. Easy to make and takes about 15 minutes to cook as well as cook the sauce. Did a trial run tonight and they turned out great. The sauce was thinner than I thought it would be but tasted great. Kids said it is definitely a do over. Turns out it is more of a meal than an app. I ate two and was done.

Sounds like sauce is an option and you could use other ones:

These Sweet and Spicy Chicken Bacon Lollipops are layer upon layer of flavor. Tender chicken, savory bacon, Hot Pepper Blackened Seasoning, and a simple sweet red pepper jam to top everything off.

Servings: 4 people
Ingredients
2 medium boneless skinless chicken breasts
9 slices center cut bacon
1 Tablespoon McCormick Grill Mates Hot Pepper Blackened Seasoning
Sweet Pepper Sauce
1 large bell pepper stem and seeds removed
1 1/2 cups white sugar
1/4 cup apple cider vinegar
1 Tablespoon salted butter
1 Tablespoon McCormick Grill Mates Hot Pepper Blackened Seasoning
Instructions

In a blender, pulse the bell pepper, sugar, vinegar, butter, and Hot Pepper Blackened Seasoning together until the peppers are chopped into small pieces. Transfer to a small sauce pan and bring to a boil. Reduce the heat to low and simmer with the lid off for 15 minutes. While the sauce is simmering, prepare your lollipops.
Preheat your grill to medium high (about 375-400 degrees).
Slice your chicken breasts lengthwise into 1 inch thick strips. Lay a piece of bacon on your cutting board and top with a strip of the chicken. Roll into a pinwheel and slide onto a bamboo skewer. Repeat with the remaining chicken and bacon strips.
Season both sides of the lollipops with the Hot Pepper Blackened Seasoning.
Place the chicken bacon lollipops on the grill and cook for 6-8 minutes per side, or until the internal temperature reads 165 degrees with an instant read thermometer.
Transfer the finished lollipops to a large plate and serve the sweet pepper sauce on the side for dipping (or pouring).

I gave you the website. But lucky for everyone t00f posted the recipe below your post.

Eta. I could not find the Grill Mates Seasoning listed in the recipe and substituted Grill Mates Bacon Chipotle seasoning.

I make them with chicken breast cut up into cubes roll in 1/2 cup brown sugar and 1T chili powder. Then wrap with bacon. Grill or bake.
