Summer Day Turkey Andouille Gumbo

Yeah, some will say it's too hot for gumbo in the summer but as long as I enjoy something and have air conditioning I will not hesitate to make a good gumbo during the summer.

This morning the carcass from a turkey I roasted a few days ago went on the stove for a slow simmer to make a nice stock.



Meanwhile I chopped up seasonings and cut up andouille, tasso and smoked sausage.



When I started cooking down the seasonings I got a roux going.



No after picture of the roux but it was the perfect color for a good turkey gumbo!



Everything in the pot for some simmering til done how I like it.

I made gumbo Tuesday. It’s never too hot for gumbo IMO

Same way I look at it. What, your red beans, red gravy with meatballs and Italian sausage, beef stew, etc. is room temperature when you eat it????

I eat all my food hot, so gumbo in the summer is always on my menu.

You're darn tootin'!

I just had a cup of crawfish gumbo for lunch leftover from Tuesday night. My AC works very well.

Nate, that gumbo looks great.

All that needs is a handful of chopped green onions and a fat pinch of finely chopped parsley. (I like green flecks in ma gumbo, cher) Pretty color, not too dark, just the way I like it.

Actually it was done about 1:45 pm.

Got some rice on cooking right now.

Looks great, but I'm one of those who can't do a meal like this in the midst of the summer. Yeah, I have central AC, but something like this would just weigh me down.

I'll check back in on this post in October.

I usually have a pretty big crowd for Thanksgiving day at the house and I will fry no less than 3 turkeys. Those carcasses make a great stock for using later in gumbos, stews or soups.

Good looking pot of gumbo you wound up with.

Honestly, I don't even think much about gumbo this time of year...I am damn sure thinking about it now, though!

Do you not eat hot food when it’s hot outside? Do you grill, smoke or bbq outside when it’s hot? I don’t do much of that!
