Really like keeping it simple when baking fillets. EVOO and butter on the baking pan or foil then season with salt, pepper, and lemon slices.

I bake mine. Drizzle of honey, splash of soy sauce, cracked pepper, salt.

I grill it but this rub would do well baking,
2 Black pepper,
1 Salt
1 Chili powder
1Brown sugar
1/2 Garlic powder
I don’t measure just mix and taste it, adjust.
I use real chili powder but a good brand would work

A restaurant here in BR used to do pesto crusted salmon, and it was awesome.
I like Thai sweet chili sauce on mine. Or horseradish lime mayo. Or brown sugar and Dijon.

Lemon pepper, pan fried finished in the oven, and make a nice pan sauce.
