Suggestions for boneless leg of lamb?

Any suggestions on cooking a boneless leg of lamb? It’s 4.75 lb.

I have an oven or a gas grill. No broiler in the oven. If any of that matters.

untie it and open it up flat, small cuts if needed to get it open. Smear it on the inside with rosemary, garlic, lemon, olive oil and cavenders, salt & pepper

tie it back up, throw it on the grill until medium rare

My Israeli friend gave me a recipe for her lamb stew that looks amazing and I'm happy to share it if that sounds like something you'd be into.

I'm making it this week, actually. I'm using bone-in shanks but I'm sure you could use boneless and it would be great.

This is the correct answer. When I was in Texas, I used to get one made up use like that at HEB. They made these up around major holidays. The nice part is after they rolled it up, it was slid into one of those elastic nets to keep it all snug while cooking. I did these at Easter a few times. A meat thermometer is key with this... you don't want to over-cook it.

You can also do that and not tie it up. Lay it flat, making slashes if needed. Grill it like a skirt steak. If you cook until thick parts are med rare, the uneven thickness will result in other parts being more done.

This is a good option if you have a crowd who want it done to different degrees. There will be some for everyone.

Thanks everyone.

I ended up going with a recipe from a Lebanese friend. I'm kinda skeptical, but she promises this is their go-to birthday meal.

Leg of lamb cut into 1 inch chunks
Olive oil
Salt, pepper, and garlic powder

1 large onion
4 garlic cloves
28 oz tomatoes in sauce
1 teaspoon cinnamon

Cover lamb in seasoning and 1/4 cup of olive oil. Brown in oven at 500 degrees.

Saute onion and garlic in olive oil until golden. Add tomatoes and cinnamon. Bring to simmer. Add browned lamb and cook for 1.5 hours on low simmer.

Serve with homemade rice pilaf.

Simple enough outside of the chopping. Wish I had gone with the butterflied and seasoned version posted here.

This recipe if done in pressure cooker would have been good. For tough meat, I always use pressure cooker.

I'd suggest cooking it like a roast in the oven if that's what you have to cook with. Sear and then cook covered at 325 to temperature. Remove and take the drippings and mix with a red sauce. Slice and serve over orzo.

I did one last week that came out incredible. Smoked at a low temperature for 2 hours then sous vide for 8hrs at 130. Finished with a searzall torch. Dumped the au jus into some Mandina's Red Gravy. Made an incredible meal.
