Gonna try to do these at home this weekend. Need some ideas for stuffing. Also does anyone deep fry these or just in the oven. Do you boil them after cleaning to get the breading to stick to the pepper?

most people will tell you to stuff them with cream cheese and wrap them in bacon. i like to mix stuff in the sour cream, like tiny pieces of onion, maybe some parmesan or asiago...any cheese with a "bite", then some salt and pepper. i just make a big bowl of it, mix it up, cram it in the pepper, then wrap him in bacon. i've never deep fried a jalapeno before.

I use cream cheese, kraft 4 cheese mexican, some ancho chili powder or tony's... mix all those together put in deseeded peppers. THen cover with jimmy dean ground sausage, bacon wrap that bad boy, and grill them about 30-45 minutes turning frequently until the bacon cooks. The sausage helps keep the cheese from spilling out everywhere.

Never tried them fried or in the oven.

Some people stuff half a pepper. My dad and I stuff them with cream cheese (like everyone else). Dried them really well, dipped them in egg/milk wash and used a cornmeal/flour batter. We redipped and rebattered 2-3 times to get the batter to stick a little better, but there were a few peppers where the batter fell off. But they were EXCELLENT. Make sure you find some real veiny peppers- they will blow the roof of your MOUTH off.

I like to put a small amount of cream cheese in to the jalepeno and then put uncased green onion sausage on top of the cream cheese. Wrap them in bacon, grill, and enjoy!

You can find Manchego cheese at Colandro's, Albertson's, Maxwell's, Whole Foods.. just about any better grocery store.. It's a Spanish cheese, and it's got a nutty flavor, not as hard as Parmesan cheese, not as soft or as sharp as white cheddar.. It's also good by itself

If you have a problem with the cheese running out, try using a paring knife to score the inside of the pepper and don't slice the pepper down the side to stuff it.. put the cheese at the bottom of the pepper and stop up the pepper with the meat, then wrap with the bacon.. ok my mouth's watering now..

Sorry about the size of the first one. New at this. Did these yesterday. Stuffed Jalapenos, Armadillo Eggs, and two stuffed Fatties. Sure was good.
