Some advice for a simple frito pie cookout

So myself and a female friend of mine have been asked to do some cooking at a bar tomorrow. We agreed that frito pie would be simple enough. She is making a chili with beans and I'm making one without (I'm sure someone will bump the epic chili thread)
Mainly just looking for ideas in toppings. I'm providing shredded cheddar and diced red onions. Not sure if we should have anything else like sour cream or cilantro or pico de gallo. Trying not to make it too complicated

Brisket is always a good topping on a frito pie.

Sounds like a good fun item.
When I was a scoutmaster, we would do frito chili pies for the scouts on campouts. We made chili, or bought #10 cans of Carnation chili and a case or two of single serving bags of fritos. The scouts would take a bag, open it and one of the adults would spoon in the chili. Then they would add cheese, or chopped onions, or (never) sour cream. We had 80 scouts in our troop and had to be very careful that before the last scout passed by the serving line, the first scouts would be sneaking back into the rear of the line. It was a difficult meal to serve, only because it was hard to make second servings for 80 scouts.
Some of your folks might want picante sauce or jalapeños. Some might want pepperjack or colbyjack.
May be better to stay simple.

Pickled red onions (easy to make)
If you’ve got low carb/keto, or other corn chip avoiding folks, offer shredded lettuce and cooked, drained beans as substitute bases to carry the chili and toppings.

Sounds like a fun thing to do. I'll refrain from bumping the famous chili thread.
I think toppings add to the fun. A create your own frito pie. All those colorful toppings out would be enticing.
I would add guac to the list of toppings already suggested.

It’s a frito pie at a bar. I say cheese, sour cream and jalapeños. Maybe they get diced onions.....depends on the beer selection.

We've tried all the flavors of both fritos and GV knockoffs, the Honey BBQ pairs up the best.

yeah the single serving Frito bags have like ten Fritos.
the pro move is to dump one bag into another then pile on the chili/etc
we are burning a big pile of limbs in the yard tonite, now we are having Frito pie

The chili is wet enough. I would not add anything more wet. Cheeses go well. More crunch is needed

HEB makes them but we had no trouble finding the regular ones here. It was a success and a lot of fun.

I drank a lot and served a lot of food and thankfully missed most of the LSU game. If I remember I'll share some pics
