Smoking meat on a gas grill

Have any of you tried to smoke on your gas grill? Mine has a smoker box for wood chips and I have read up on wrapping wood in aluminum foil and placing on one of the far burners and putting the meat on the other side of the pit. Do any of you know if this method will produce decent results? I am not opposed to buying a smoker but would like to kick this idea around before dropping coin.

I have a gas grill and a smoker. But I would be worried that the meat would take on a gas flavor since there much to buffer the meat from the gas. For a added flavor on something grilled you probably wont have an issue and its probably what they expect you to do. But I wouldnt do something like a port shoulder fro 12 hours or anything like that.

What kind of smoker are you using? I have been interested in getting a smoker for a while and want to do some brisket and ribs.

I have a Webber Smoky Mountain. It was about 300 from Amazon. I love it. I guess I could pay more to get a Big Green Egg so I can have the grilling ability but for smoking both are equal. They make a larger one now too that is a 22.5 inch grill instead of 18.5. But I have done 4 pork shoulders on mine before so I dont have much of a need for the bigger one right now.

Good to hear. Where do you guys buy your wood chips from? Think I could just cut up some oak and pecan firewood with a chop saw? I am going to experiment on getting the heat right with just the one burner on low. I don't think I will have much problem maintaining 225 degrees with the one burner as with two on low and the center one out I keep my drunk chickens at 350.

It can be done, but you don't get as much smoke flavor as using a real smoker.

You can buy a cheap smoker that will produce a far superior product.

the problem w/ smoking on a gas grill is the loss of moisture in the meat. they're not made for moisture retention. you can cook off fire and get a smoke flavor from the chips on fire, but you can't cook anything that takes a while w/o it drying out.

solution: big green egg or one of its competitors--very versatile and recipe driven. using the hardwood coals is very easy and almost as quick as gas. it takes me 7 minutes to grill ready.
