Smoking a turkey for the first time. What are the do’s and don’t?

I smoke brisket and ribs frequently but have never done a turkey. Anyone got any pointers?

Smoke at a higher temp than you would brisket or pork

Take it off the smoker when internal temperature reaches 165 degrees. Wrap and let rest as temp will rise a few more degrees. Watch for the temperature “stall” and keep it in the smoker until 165 reached

This will result in rubbery skin.

Can you not wrap a turkey with foil and a towel to keep hot like brisket?

Don't wait until the weekend before Thanksgiving to learn how to smoke a turkey.

You can, but due to the moisture the skin will get rubbery.

Poultry doesn't need to rest like other proteins.

I smoked my first one ever last week and it was pretty damn easy, and came out amazing.

My only mistake was just watching the temp on the breast and not the dark meat.
Take it out when Turkey reaches 165 on the breast, cut off the legs and thighs, put back in smoker until they reach 180+. Let the breast rest upside down so liquids stay in the breast.
Don’t do what I did and put thighs and legs in oven. Put it back in the smoker.

Do brine the turkey. Start setting this up tomorrow or Monday. 36 hour brine and be liberal with the salt.


What are your smoking it in/on?

Has anyone done a smoke then fry turkey? Love doing wings this way wonder how it would work with the bigger bird

Spatchcock, dry brine and smoke at 350-375 until it’s done!

You absolutely should spatchcock the bird, and pull out the breastplate too. It helps the legs cook more evenly with the breasts.

Dry brine for at least 24 hours up to 36 hours with a 2 to 1 salt to brown sugar mixture as a base + spices. I just add tony's to the brine mixture. This usually helps with a crisper skin that wet brining.

break the turkey down into a whole breast on the rib and keel bone, two thighs and two legs. You can throw the neck on there as well for the chefs treat

the dark meat will benefit from a longer smoke and should be cooked to 180 or so (or more). The breast should be pulled at 155 or 160 for carry over

I know nudity isn’t allowed on TD, but I had to show the TD these beautiful breast!!!
I smoked my second turkey today, 8 hrs at 230 (16 lb turkey).
The breastgot to 165+, removed the bird, let rest 30 mins, removed legs and thighs, they in the oven as we speak.
These breast are for Gobble Day

Gonna freeze it, heat it Thursday. Turkey isn’t our main event Thursday, just MsAntique wanted some turkey as well.
