Smoked meatballs

Little over 1/3 pork, the rest ground beef, fresh seasonings, on the smoker with some mesquite and apple.

I think I'll throw some sausage on later.

Meatballs look good and you have a nice backyard set up. Definitely would eat a meal and drink a beer out there!

I've got some frozen smoked meatballs from Teet's and have wondered about how they might work in a tomato based sauce. How have other people used them?

Meatball Stew. Make a roux and add chopped bellpepper, onion, celery and garlic. Add chicken broth and let the stew base cook, adding chicken broth when needed to keep the stew base rich, (not liquidy like gumbo)

Let the meatballs thaw and come to room temp.. Then, 30 minutes before serving, add your meatballs and bring the temp up to a boil, then reduce your heat and let simmer til you're ready to serve. Top with chopped parsley and serve over rice.

Good sides are cole slaw, potato salad, black eye peas, or green beans.

Mine too.. If you don't have the smoked meatballs, you can drop the meatballs in raw/uncooked and let them cook in the roux.. takes a little longer and you have to cook them on a low boil.

I saw this recipe a few months back and have been wanting to try it.

Cajun Meatball Fricassee

My mother made a dish similar to this when I was a child.

She called it "brown boulettes".

My dad is from Mamou and I've seen this dish made a million times and I've never seen anybody make meatballs like this recipe.. and I don't like a bunch of dried herbs, I prefer fresh.. but that's just me.. I also like to use all beef for the meatballs without the bread and crackers and cheese.. that'll make your meatballs fall apart. I also don't see going through all the trouble laid out in the recipe, and then using a jarred roux. If you make your own, jarred roux can't compare.
