A cold, briny, huge Gulf Coast raw oyster. Big enough that it's hard to get down in one swallow, and leaves its juice running down both sides of your mouth.

Very, very true.. No comparison between Gulf and Atlantic oysters.. Gulf are so much better.

My best bite was from August. Hand made gnocchi tossed with blue crab and black truffle. But it’s been awhile.
