Should I cover a pork roast if cooking in the oven?

3.5# little stuffed pork roast I’m about to throw in the oven. Should I cover it with foil or let it cook (350F) uncovered?

I always cover a roast in the oven.

Cover first, then remove the foil after an hour.

I do. Uncover it near the end to bring back the color and firm it up a little.

Always cover. You want the moisture to stay in the pot. You'll have a dried out brick if you leave it in the oven uncovered

I like to brown all sides real good on the stove in a black cast iron pot, then add water, cover and toss in the oven for several hours till I can cut it with a spoon.

Makes a great gravy.
