Short ribs in the kitchen - need recs

Always done them on grill, looking for best recipe and method in the kitchen.

Whatever you do with them, take pictures and submit them to our cooking challenge. Beef short ribs are the protein this week.

My wife does a 1-2 day SV then finishes them under the broiler. Put over some mashed potatoes with a demi glacé pour. One of my favorite meals

Smoke, then braise. Serve over creamy, cheesy grits...

Sear them in cast iron dutch oven. Then cook down some onions bells and some carrots. Throw in a dark beer and/or some stock. Get it hot again and throw the ribs back in. Cook in a he oven till done, the longer the better. Take the ribs out and reduce the sauce if needed. Serve with/on some mashed tators and feast
