Seasoning Jambalaya

Well all discuss in length how to get the rice right in Jambalaya. But what about the seasoning? Of course the trinity is used but what else? Tonys? Salt and Pepper.

What say you?

I use jalapeno peppers,salt,black and red peppers,and a little thyme,oregano, and basil,plus bay leaf,green onion,garlic and parsley.

i make my final adjustments after i add my stock and it comes to a boil.
i taste it several times. better to under season, because you can add but not remove.

True. You HAVE to make it taste right BEFORE the rice goes in , or there's no way in Hell it's gonna tatse right afterward.

I never add trinity to Jambalaya one of the only things I dont. I dont care for the celery in it and the bell pepper does nothing for me in it. I use onions only.

Seasoning I use will consist of black pepper, white pepper, thyme, basil,little bit of oregano, salt, red pepper flakes,minced garlic and a little cayenne if I want a little heat.

I know most of you probably just throw it in by experience, but any guess as to how much of each seasoning per cup or pound of raw rice?

In a pot with 4 cups of rice.
1 1/2 tsp ea black pepper,red pepper,white pepper.

1/2 tblsp basil and thyme

1 1/2 tblsp garlic

3-4 tsp salt


ETA: But as always "season to taste".

Also browning tasso and andouille a good bit will give you jambalaya a lot of flavor.

Shame on you for thinking that celery and bell peppers add no distinct flavors to jambalaya. And the bell peppers add color that enhances the presentation of your jambalaya. I like to use green, red and yellow bell peppers to jazz mine up.

Most Jambalaya champions do not use it either.

I have green in my jambalaya already from parsly so not sure why I need the green from the bell pepper. The celery I really dont care for in it.

black and red pepper, salt, garlic powder.
in cook offs i don't use black pepper but add a little hot sauce, the black pepper can make the rice look dirty with black specks and hurt the presentation.
if you want easy seasonings, use leblanc's cajun seasoning in the yellow can. roughly about 1.5 oz. to every pound of rice.

true gonzales jambalaya doesnt need thyme or basil or oregano. but jambalaya can be cooked many different ways and taste great either way you choose.

I use all of the above mentioned, but I also throw in some herbes de provence which is like Italian seasonings witha few extra things one of which is lavender.

Now Im aware you may be talking about Kim Leblancs also. But Im pretty sure he probably has basil or thyme or oregano in it as well.

I use salt, black pepper, red pepper, garlic powder, yellow onions, green onions and most of all LeBlanc's seasoning. Also will use chicken bouillion cubes to add flavor.

I like to season my water to a good strong seasoning taste before adding the rice. It may seem a tad salty but rice absorbs a lot of the salt.

I never use celery or bell pepper in my jambs.

I`am not the guy who makes the jambalaya for all the parties throughout the year. I might make five or six a year and no two or ever the same. Last year I made one and used a good bit of file' as one of the seasonings. Came out really good,might want to give it a try.

i was talking of kim leblancs seasoning blend. as far as i've been told from te man himself, there is no thyme or basil or oregano. unless he changed his recipe in the last year or so.

also, nothing is wrong with using any of those, i was stating that true gonzales style jambs don't contain them.
