Tell me about this sous vide phenomenon I'm hearing more & more about.. what are the benefits of it? What cuts of meat do you use it for? Which one do you recommend?

Benefits: Being able to cook food at a very precise temperature
What to cook: Everything, but meat is where it shines
Best meats: Thick pork chops, loin, steaks, chicken thighs...any thick cut of meat

Do you Always sear meat afterwards? I know I would want to sear steaks fa sho.

Before and after actually if it's thick enough
Meat cooked sous vide only isn't very aesthetically pleasing

Pork can be cooked medium or below, still very pink inside ... frozen meats don't have to be thawed ... meat is generally more tender and juicier than the equivalent degree of doness by grilling or searing then roasting ... a steak cooked to rare via sv will be better than a steak cooked to rare via grilling since the meat is actually cooked more thoroughly at a precise temp ...

I have only used mine for cheap cuts of meat like chuck roast or rump roast. I actually did a few rump roasts for my family Christmas party and everyone thought they were delicious. Just seasoned, vacuum sealed, and cooked them for roughly 24 hours. Just as easy and way better than a crock pot.
