Got two prime eye of round roasts I'm gonna smoke to 130 internal then shave thin for French Dip mini poboys. Nice au jus, several sausage and boudin samplers, and there may or may not be a vegetable side for the semi-health conscious less carnivorous folk in the crowd.

You put butter in with the wrap?

Yes, real unsalted butter. Didn’t think to get any finished shots until I vacuum sealed them.

Nice, I tried some breasts several months back but they were tiny and didn’t come out great. Need to pick up a few to try again before thanksgiving

First time smoking chuck roast. Put it on my Bronco around noon. Temp has varied as much as 30 degrees depending on where I probe it. Wrapped at 185 but now when I put it in a diff location it says 155?? Will see what happens

Your getting the probe in fat pockets versus meat. That is the variance.

How much per lb you paying for straight turkey breasts, my man?

Picked up 2 at Albertson’s on Friday. They were $3.99/lb I think, but buy 1 get 1 free, so it was well worth it. Got 2 6lbers.

11lb butt went on the Masterbuilt yesterday at 5:00. Pulled at 12:00pm today and served for dinner tonight. Delicious! Think I’m going to smoke one of those breasts tomorrow.

Are those 3# butterball boneless turkey breast roasts worth a crap? How processed are they?

Yes these are good. They will have a netting around them that I leave on when I smoke them. I usually injet them, then put the rub of your choice on the outside then put them on the smoker. I usually do 2 for Thanksgiving since we fry the main turkey. Always gets wiped out.

This is what I'm looking for. I know the whole bird spread looks nicer, but I'd rather serve some bomb breast meat for the smaller Saturday gathering. What are you injecting with?

Nice, I already use that for whole chickens. Wasn't sure if you had something else for turkey. Thanks for the quick replies

I mean you can doctor it up to your liking for sure, I just keep it pretty simple. Hell the rub I use is just cracked black pepper and kosher salt.
