Rice Dressing

Here's my rice dressing thread. Tastes damn close to my mawmaw's recipe.
ETA: and yes, technically speaking, because it has meat in it, it is dirty rice, not rice dressing. But it tastes just like my mawmaw's rice dressing. The liver is the key.

This is basically the recipe I’ve been using, I add a smidgin of dark roux and cook it down for a couple hrs then add the rice, it def adds some richness

2 lbs ground pork
1 onion (chopped)
2 cloves garlic (minced)
1 bunch green onions (chopped)
Throw everything into a pot together and cook down until vegetables are soft and meat is brown. Will take some time for excess liquid to evaporate.
Mix with cooked rice or your favorite rice substitute. We've started using toasted Israeli cous cous just to switch it up and it's awesome.
Season to taste. I like to hit my serving with a little Crystal, too.
This is my Maw Maw's recipe and it's so simple but so good.

How many people does this serve? Trying to cook for a crowd of 10 on Thursday and this looks like a delicious side with some green beans and turkey.

I’d say about 8-10. Not really sure. Should be enough for 10 people, or you can up the rice from 1.5 cups to 2 or 2.5 cups and just adjust your seasoning. Should still be plenty of liver and meat (maybe add a little more liver). Just remember to adjust your liquid levels. As well and I’d let it cook for at least an hour.

Don’t forget to season. I don’t really put that on my recipes because I eyeball it and taste the liquid as it’s coming to boil until it’s just right.

Rice dressing is generally made with ground beef and/or pork.
Dirty rice is made with pork and chicken livers (the dirty). Gizzards also work.
But don’t take it from me. I’m an a-hole.
