Regulating heat Kamado style grill.

Just got a 24 inch Louisiana Grills Kamado style grill from Costco.
Today is my first time trying to smoke a Boston butt.
I was aiming for a temp of 250-255. But currently it has stabilized at 285. I have the vents closed as much as possible without fully closing. What am I doing wrong?
I’m assuming I got it TOO hot while trying to get it to 250 initially.
Will it be ok in the 280 range?

300 degrees is the magic number. You’re fine up to 300 degrees.

Put it on and Close the vents as much as possible until it gets to the temp you want. Be patient, it’ll get there
280 isn’t a bad temp tho

The first couple of times you use it it will burn very hot. As the coal dust plugs up air leaks, the air flow will level out and you will be able to stabilize the temp.
Also, that ceramic is super efficient at retaining heat. If you let it get too hot, it will take forever to get the temp back down.

Flame Boss
Got one of these for my KJ, game changer.
Set the temp on app on your phone and it will keep at temp for hours. You can lower/raise the temp from the app as well.
Has a meat probe too. You can turn it on and run to the store to pick up more beer and check pit/meat temp lower/raise temp from anywhere.
It also saves your cooks with a graph of temps and times and add notes.
Expensive, but worth it IMO.

You can try to burp it with the vents closed but I find that sometimes it makes it worse by allowing more oxygen in.
I’ve had an egg for 4 years and the wife just got me an egg genius for our anniversary. I will say this thing is a game changer. I just barely light the coals, set up the genius, set my temp in the app to what I want and then go prepare my meat. Man it is awesome.
I did some ribs last weekend and took the kids fishing while the egg genius did all the work.

The key is to watch it and shut it down when it reaches the temperature you want. When I do a butt on my Primo, once it gets to 225, I close the bottom vent to about the width of a quarter and the top vent about the same. It will stay around there forever.
If you let a ceramic get too hot, it's hard to get it back down. You'll be okay at 285, especially if you thought to use a water pan. It will just be a little drier.

I find using nice jumbo lump charcoal helps with regulating and refining the temperature
