Unless he never uncovered the pot once while the food was in the danger zone, then having the lid on is not the “sterile” environment you’re making it out to be. Assuming that’s not the case, then the warm condensate creates an ideal environment for bacterial growth,

We can split hairs all day long, but the science says to throw out food left out overnight, covered or not. I’m sorry, that’s just the fact.

Never said it was sterile. I said I would feel better about it if covered. I do not understand why you do not understand this. Do you really think uncovered beans and sausage, left overnight, is safer than covered?

You're doing it again. The food was left out. We are talking about food being left out.

I can't speak to red beans and rice, but my wife did something this past weekend that left me wondering WTF she was thinking.

She had steaming meatballs in one crock pot and steaming mac and cheese in another. Around 7 pm on Friday night she turned the crock pots off and left them out overnight until we left for the Mizzou game around 830 am. Got to the tailgate, plugged and turned on the crock pots and got them warm until it was time to eat.

I let other folks eat those dishes first and then waited a couple hours to make sure no projectile vomiting was occurring and then chowed down myself. Still alive, and didn't get sick. As far as I know no one else did either.

Keep eating your botulism stew, bro. Godspeed to you. I’ll just pick my food up before bed or if I didn’t, I’ll throw it away... whether or not there was a lid on it.

When I was young my mom kept leftover pizza in the microwave not the fridge. And sometimes for days and no one ever got sick.

Matter of fact, my 1st job out of HS was at Gatti's and I got to bring the leftover buffet pizza home and it was always stored in the microwave.

Wife (no pics) made a shite ton of white beans and sausage one time and I left it out overnight, I wanted to salvage but she insisted on tossing.

These threads crack me up. I have never thought twice about eating something left out, covered or uncovered. Never gotten sick. If in doubt, nuke it, microwave kills everything is my motto. People at work freak out "OMG, that has been out allllll day! You can't eat that!" "Look, Karen, not only will I eat it, I may bring the leftovers home, let them sit out and eat them tomorrow, just to frick with you."
