red beans and rice for 100

quick question. how many pounds of beans do you think it would take?
cooking a gumbo for approx. 100 then doing red beans for same number later on for a fundraiser.

25 lb sack from sams for 18 bucks will be PLENTY. get the block of rice while you're there, and you just fed the group for .35 each, not including your sausage of course.

Just looked on a bag of dried beans in my pantry, and it says it does 6 servings per lb.
Depending on how much rice everyone wants, I'd say probably what? 35-40 lbs of dry rice?

we are making "suppers" for our football teams. problem is one week they may sale 100 then the next they will sale 50 or so. not a real sure number.

I was a bit high.
Checked with a chef buddy of mine and he said 1/2 lb of cooked rice per person, or roughly 1/4 lb of dry rice per person, so that would be right at 25 lbs of dry rice.

1 lb beans feeds 4-6 generously, so 20 lbs should do it.
I use 1 lb. sausage per lb of beans, 1 onion and 2 stalks of celery.
For rice, 1 cup dry makes 3 one-cup servings prepared, so 35 cups of rice, not pounds of rice, should be the right amount.

With my recipe, I used to be able to make about 40-45 plate lunches I think.
I used 6lbs of beans, 12 ham hocks, and 4-5# of andouille sausage. I would shoot for about 15lbs of beans and about 10#'s of sausage. I would assume that if you use less sausage you are going to need more beans. Not sure about the rice though.
Onions- 25-30 each
Green Bell Peppers- 12-15 each
Celery Stalks- 12-15 each
Bay Leaves- a bunch

1 cup = 3 cups cooked
There are about 2.5 cups in a pound and you want .5 cup per person.
So you need 50 cups cooked so you need about 17 cups not cooked.
If you dont use long grain its 2 and 2/3 cups for every cup served and parboiled is 3-3.5 cups per cup.

This is exactly what I would do. And I would soak the beans the night before in a couple five gallon buckets filled full with water because they will soak up a lot. You would really want to soak them when cooking this amount of beans.
Good suggestion. I might try this for a game myself. Never made that big a batch.
