1 lb. fresh asparagus with about an inch trimmed off the tough ends. Rinse it and pat it dry with paper towels. Preheat oven to 450. Shake it up in a gallon ziplock bag with 2 cloves minced garlic 1-2 Tbsp. EVOO (just enough to coat it as a binder) 1 tsp. salt (you can adjust depending on how salty you want) 1/2 tsp. fresh cracked black pepper (same as the salt) Spread it in a single layer on a foil lined baking sheet and sprinkle about 1/4-1/3 cup fresh grated Parmesan Reggiano over the asparagus. Stick it in the oven for about 7-10 minutes depending on how tender/crispy you like it. Quick easy and tasty!
I may do this. Low prep work

Zero cleanup also.
Throw away the ziplock bag, throw away the foil, put the baking sheet away and you are done.
Probably one of the reasons I cook it so much, plus it's good.

So, I probably do your asparagus and a mushroom risotto

I’ll offer a change of pace
Marinated artichoke hearts
Capers
Quartered cherry tomatoes
Kalamata olive sliced
Green olives sliced
Shallot sliced
Lemon juice (or any vinegar really)
Tossed as a fresh salad
The saltiness and the acid is a nice balance to the rich, heavy beef flavor

Recommendation for an easier risotto recipe: Setious Eats
I've used it and it works. Easier than slowly adding the stock.

Asparagus…olive oil and salt and pepper. Grill on aluminum foil for 15 minutes.
Add some premium soy from an Asian market. Yum.

Roasted cauliflower. Oilve oil, salt and pepper and roast.

Roasted cauli is a great side.
Boil until tender and then into a 500F oven until it forms some char

Twice baked potatoes goes with everything. Also, baked asparagus with blue cheese butter.
