Recipes for traditional Cajun side dishes?

We have the typical green beans. Rice dressing. Sweet potatoes.
I want to bring different things.
I have two lbs of crawfish tails.
Two lbs of shrimp.
Sausage
Chicken thighs
Pork
Deer
Ground beef
Ground pork
Chicken liver
3 bell peppers of every color
Celery
Onions
Rice
Pasta
Potatoes
And a very well stocked pantry
Just want to try some new things

Cook up a dirty rice, add the shrimp, stuff IN the chicken thighs . Roast it off.

yep get some mirlitons early tomorrow morning and make shrimp mirliton casserole or stuffed mirlitons.

This board may call it sacrilege, but given we already have a standard dirty rice, I'm thinking your idea but stewing down tomatoes rice and peppers, then adding shrimp, then stuffing into pork loin instead of thighs. (My thighs are bone in)
I like.
As for mirliton, all the ones at rouses felt a little too firm. The casserole is a staple otherwise.

You wanna use all those ingredients?
If not I'd suggest a crawfish and andouille cornbread dressing. Only thing missing from your list is the cornbread. And I like to add tasso as well. If I don't make it every year I'd probably be shot.
