Recipes for Stuffed Banana Peppers (and what to do with Squash)

My boyfriend gave me some banana peppers and squash since his family has a garden. I was thinking I would stuff the banana peppers, but does anyone have a good pepper filling (i.e. one with ground beef, cheese, onions, etc.)?
He also gave me some squash too. I was wondering what else I could do with the squash besides grilling it.

Here's an easy reciepe that I use all the time. Brown bulk sausage and drain thoroughly. Either melt a soft chesse product or make a quick white sauce and add your favorite cheese to it. Mix the cheese (or cheese sauce) into the sausage. Slice the top of the banana pepper off and make a slit down one side, seed the pepper. Spoon the sausage and cheese mixture into the pepper. Cover the entire pepper with store-bought canned cresent rolls to seal them up ( Large peppers may take up to 3 cresents, but with this , the more the better). Bake according to the cresent roll can. These are simply delicious. I usually make 6-8 peppers and refrigerate the left overs. A friend of mine gave me the reciepe, but she uses hamburger instead. If you freeze your peppers whole, you can thaw them out and fix this any time of the year.

An easy thing to do with squash if you're not into frying is toss it with lemon juice, olive oil, garlic,salt and pepper and italian herbs. Layer it with onion, fresh sliced tomato, and parmesan cheese. Bake at 350 for about 20 minutes.
You're right that squash doesn't lend itself to lots of different preparations. You can stew it, steam it, grill it or fry it and that's about it. It's good in soups, but it falls apart if you add it too early and cook it too long.

If you get a wild hair deep fry the banana peppers. Slice the peppers in half, give them a nice butter milk bath, cover in self rising flour and deep fry at 375F.

From Cajun Cooking and excellent:
Ingredients for Smothered Squash
4-5 Yellow Squash, sliced
1 medium Sweet Onion, chopped
1 Red Bell Pepper, sliced
4 slices bacon
2 cups water or chicken stock
Tony’s or Salt & Pepper to taste
2 tablespoons olive oil
1 cup Italian bread crumbs
1 cup Parmesan cheese
Cooking Directions for Smothered Squash
Begin by heating 2 tablespoons olive oil in a 6 quart pot on medium heat (#6).
Cook the bacon. Set aside on a paper towel to drain and cool.
Saute‘ onion and bell pepper until softened.
Add 2 cups water.
Season with small amount of Tony’s or Salt and Pepper.
Add the sliced squash.
Crumble the bacon and add to the squash.
Stir well.
Cook covered for 20 minutes.

Similar to what Lester recommended.
Cook up some breakfast sausage. Stuff the banana peppers with the sausage and cream cheese. Wrap with a slice of bacon. Stick a water soaked toothpick through to hole the bacon in place. Grill until the bacon is done.
Not very healthy, but an awesome treat.
