Any recipe ideas would be greatly appreciated.

The hospital had left over giveaway crates and I obtained two, so I have a massive ammount of:

Potatoes
Onions
Carrots
Sour Cream

I am looking for ideas on how to use any or all of them in bulk recipes. I made a Huge Shepherds Pie last night. We just have so much and I want to use it and even cook a bunch and store it in the freezer. Thanks

Check out Loaded Baked Potato Soup recipes online. That covers potato, onions, and sour cream. It should freeze okay.

Also cut them potatoes up and make fries in the air fryer as a side dish or snack.

Make a hash brown/home fries type dish with them. Diced onions, cubed or grated carrots and potatoes fried up in some butter or bacon grease and sprinkled generously with Tony's and your other spices of choice is always good eats in my book.

Cut up the vegetables, coat with olive oil, season, put in a large pan, place some leg quarters on top and bake at 425. Pull the chicken out when it is done and let the veg cook a bit longer in the chicken juices until it is the consistency you want and has a bit of color on it. Serve with a dollop of sour cream on top.

Potatoes au gratin
Potato salad
Potato/Onion soup
Roasted vegetables using the potatoes, onions, carrots and anything else your heart desires

French onion soup
Dice up onions and freeze to use as seasoning
Thick cut grilled onions

Carrot cake
Julienne carrots and put them in salads or use in stir fry dishes
Beef stew with potatoes, carrots and onions for seasoning

Don't have much for sour cream other than using it on baked potatoes, adding to a dredge mix for frying some things, etc.

The thing with carrots and potatoes, especially in soups or stews is they really lose a lot of texture when frozen. When thawed and warmed up, they are pretty soft and kind of mealy, but still edible----just a different texture.
