Rare Handwritten and Self-Published Cookbook

Ran across this in my cookbook collection and thought I'd share. The author is an Italian guy from south Kenner and loves to fish and then cook his catch.

I grew up in Metry during the 70's and mid 80's. Often times we caught crawfish in the spillway (Norco, LA). Remember dad "purging" the crawfish by adding salt to a large, galvanized bucket full of water. That's all we knew back in the day. Wasn't until the LSU Ag Center in Crowley proved this technique does not work and salt actually kills crawfish. Cleansing the live crawfish in a water bath only removes debris and mud from the shell. To remove the shite vein, crawfish should be soaked "purged" in regular water for 1-2 days without any food source.
