Aha. Here is a link to what I mentioned before. Turns out that the addition of salt beforehand actually makes them less tough since salt weakens the electrical protein bonds in the eggs. Ramsey's probably correct that pre salting and letting them sit for a while would make them too runny. Like Rohan, I salt right before I cook, so it probably does not make a difference.

I cook mind like this minus the creme fraiche. They are not runny they are just soft, it is hard to explain. They are amazing when cooked this way.

Been making my eggs this way for awhile, just had some for dinner, turned out amazing.

tried the ramsey method this morning except i cooked the eggs longer--don't like runny scrambled eggs.

i thought they where good. the biggest difference i could see is that you get lighter, fluffier, eggs when you scrambled the eggs before putting them in the pot. texture was different with this method but the flavor was the same.
