That was more than a couple things.

I've had amoebic dysentery 3 times. It wasn't from eating 8 hour old roast.

It's fine. People in other countries do this all the time. (my cousin-in-law's parents from Greece do this kinda thing all the time on purpose)

Wuss. I'd have eaten that without a second thought.

Me too. But I eat just about anything.

It would not even have flittered across my mind that there might be some kind of "food safety" issue from roast that was left at room temp for ~8 hours. You probably were more likely to injure yourself walking the roast out to the trash can than you would've been in eating it.

One last thing. People have experienced lethal poisoning from Botulism producing organisms with no noticeable off taste in the food. Botulism production occurs in low acid food under anaerobic conditions. I seem to remember cases of botulism in dressing left out too long before cooking. I am suspicious it could grow in red beans if handled wrong.

There it is. The Godwin's Law of food safety discussions: Botulism.

To be fair, Botulism is no joke and you probably know a lot more than I do about contamination with your testing background, but I've gotten into some debates, specifically around brewing, where people said I'd die from Botulism if I didn't do something a certain way in a certain time period. I'm still here and still enjoying my botulism-free beer.

Not worth looking it up, but I don't recall botulism from beer, so I'd say drink all you want.

What I do know for an absolute fact is that the botulism toxin is denatured by alcohol, so as long as you drink a shot after each mouthful of any food item where you are concerned with botulism poisoning, you should be OK.

Comes form bad water. Not usually food borne.

Stop drinking pond water and ditch water and you should be OK.

Might try boiling your cistern water, or pulling the gutter away for the first five minutes of rainfall to make sure the gutters wash out before feeding the water into the cistern.

Chlorine or Iodine pills work pretty good, too. They make a backpacker's filter unit that does the trick with nearly 100% assurance of providing safe drinking water from the most grim source.

That was correct - a couple of things you needed to hear, mixed in with a pot full of wasted time.

I guess the question is, Do you kneel down to drink, or lap it up like a dog?

(Judges 7:5) So Gideon took the men down to the water. There the Lord told him, “Separate those who lap the water with their tongues as a dog laps from those who kneel down to drink.”

The lap like a dog guys were the bad ones and God used them.
