There was an episode on the Food Network of "Best Thing I Ever Ate" where the theme was cheese. John Besh appeared extolling the deliciousness of the Bon Ton Crabmeat Au Gratin. He was speculating on the brilliant crafting of the exotic cheeses that went into the dish.

In mid-sentence, someone handed him the actual recipe from off-camera. From his reaction, you could tell the ingredients were very pedestrian. They probably included deli American cheese, or maybe even Velveeta.

It's American cheese. The owner told me a few weeks ago that John Besh had to eat the au gratin 3 times during the filming.

I think they buy it by the block, but I don't think it's Velveeta. I had it a few weeks ago and the interior is not real cheesy. There was more cheese on top.
