Thermapens are a good price as well. Anyone have the mk4? My Maverick still works fine for reverse Sears and smoking. I know serious eats sings a lot of praise for a good instant read thermometer. Do you guys find them to be that useful?

I use my probe the most. Any other advantages to the instant read other than being instant read?

Not trying to be mean, but why should i pay $70 for a meat thermometer? Mine has always worked fine and is like $15 or so?

But is it a game changer for the average cook? I could understand if you made candy, custards, other things where temp was essential.

At Thanksgiving I was smoking a turkey and overcooked the bird by 30 degrees. I was using a Maverick wireless thermometer that was faulty. I brined it so it was just on the good side before being too dry. So yes to game changer.
I need to get a new one that is wired/probe real time temp. If you keep taking off the lid to check temp you are letting out heat that will add time to cooking. But I ain't paying $70.00. No bells and whistles, just real time temp.

I guess it just depends on how "nerdy" you feel like being. I like data. I like comparing temperature input vs time vs food temperature and really zeroing in on dishes. Some people are really good at figuring those things out by feel, but I'm not one of those people. I need data and to see trends.
Edit: Note that I'm talking about the regular ol' thermapen. Not the smoker version. I have a Maverick for smoking that works great for it's purpose.

Can't you use a probe for that though? And you don't have to keep sticking whatever you're cooking?

Like a probe with a cord? That would be annoying on a piece of meat that requires turning in a skillet or grill. Plus it would be sticking halfway out of a salmon fillet or chicken breast and I can only have it one piece of meat.

The instant reads are nice for grilling/cooking multiple piece of meat like steaks, chicken breasts/thighs, etc.
It's also nice to check different areas of the meat you're smoking.

Same. The wife has even started using it when baking chicken breasts. She loves that her chicken is longer dry af.

My wife started using my thermapen for baking cakes. She bakes to temp now not just by toothpick test.

I understand the point of an instant read, but what makes these so much better? Why pay $70 for this one when there are dozens of brands on Amazon for under $20? Is the thermapen that much more accurate?

The thermapen is consistently rated as not only the best and most accurate, its also the fastest. Reads the temp in around 2 seconds.
For cooking things in an oven or pit where you can lose heat that can help greatly. I’m not 100% sure about all the others, but most can’t read that fast. I know every other one I’ve ever had didn’t.
I have the smoke also... that replaced the maverick which crapped out, the cables on the smoke (all thermoworks cables) are much sturdier than the maverick stuff. You can tell the build quality is better as well. Another good thing about the smoke is it works on a radio signal, not Bluetooth. It has much better reception with the remote.
