But if you are looking for one to use for your ground meat needs choice usually yields a 80/20 mix on da cheap. I grind choice and smoke prime.
The Costco in lafy is out of any briskets until Wednesday night and Albertson’s doesn’t have any until the sale tomorrow. So SOL ta night on those two fronts.

Thanks for the heads up. Making my bi-weekly Costco run tomorrow. But since I’m obliged to boil crawfish I can’t justify buying and smoking a brisket this week. And I don’t freeze beef.

I’ll take one of those and grind a few 1lb packs for cooking stuff on the quick and then freeze some 1lb packs cubed up ready to grind if I want something like burgers.

I had a vac seal type for decades. About a year ago I got a chamber vac and haven’t looked back. Either one will work. I split off the flat and point and then any large chunks of fat. Weigh it up to a 80/20 ish mix using the 3 piles and then decide how much ground and how much cubed I want. Freeze it in flat packs. Any extra fat I’ll set aside for grinding with leaner cuts or make tallow. Depends what I have in the freezer already.

How many lbs are they usually at? I only get brisket when cooking for at least 10-15 people so I prefer the Costco size portions to make sure I have enough.

While Costco is a "big box" store, I don't think the cows they get are any bigger than what every other store gets.

While this is true, I can usually find 18-20lb briskets at Costco. If I go to a normal grocery it’s much harder to find them that big.
