eggs are a cheaper alternative to meat, this was very popular in the 1930's and 40s. and has stayed with a lot of Italian families.

I come form a giant Italian family they always have boiled eggs in the pasta and gumbo.

Most folks I see eating potato salad in their gumbo is also in addition to the rice.

I'll eat potato salad in my gumbo once in a while and I too like it as an addition to the rice. I'll put my rice in the bowl, add my gumbo and then a scoop of potato salad.

But I'm not fussed if there's no potato salad.
