Pork Shoulder Help

Went to Costco and bought a 17 pound whole pork shoulder. Doing research, this seems to be including both the Butt and the Picnic Shoulder. Can I split this or do I have to cook it all at once. I’m not sure my smoker can handle the whole thing

Of course you can cut it in half. You will likely have trouble cutting through the bone

They are connected by a joint you can separate them there. Do a search on "how to separate pork should from picnic".

Cut the picnic away from the blade. Do what you want with the blade. Make a mock ham out of the picnic. Or dice up the picnic and save for pork stew

Edit: it’s very easy to separate the picnic from the blade with a hacksaw. It’s not gonna kill you to have a little arm on the shoulder when you cook it

You can split it at the joint with a good boning knife. You don't need a meat saw or hacksaw to do it either.

I bought one of those same packs at Costco and it was actually two pieces in there with the bone removed.

Put it on last night about 9:20 at 225° and it is at 170° now.

If you can do the whole thing, do it that way.

I assume the skin is still on. If so, you'll get some delicious crispy skin out if it. Maybe do it mojo, cuban style. You'll love it.
