I am for purposes of this question excluding ham and bacon as those are not often the main protein in a salad.

When you go to restaurants and see salads, the most common additions seem to be chicken, steak, crab, shrimp, lobster, salmon, tuna etc. I do not think I have seen pork tenderloin/loin/chop meat as an option to add to a salad.

What do you guys think is the reason for that? and as an aside, do you think there would be an issue putting any of the three options on a salad instead of the above proteins?

I dice up leftover loin/tenderloin and put it on salads all of the time. Protein makes the salad for me.

Seared hog backstrap is awesome on a salad. I make it frequently.

I don't know if you consider them a "salad," but I think the chargrilled pork is typically the best version of the Vietnamese bun bowl.

Outside of a BBQ place, you just don't see pork on a menu unless its a house specialty pork chop. Pork is cheap and great for at home meals. People just don't order it in restaurants.

It seems that most salad proteins are simply meats that are otherwise on the menu. A lot of places don't serve pork loin / pork chop.

I bet if you were at a place that had pork chops and also dinner salads, you could ask for it.

Whenever I make pulled pork, I always end up doing a lunch salad or two with some of it.

I feel like there is often a pork chop at steak houses or seafood houses.

I may try it on a salad this week. I sous vide'd a pork loin this morning and may dice it up for my salad
