Pork Belly in Jambalaya

Making Jambalaya for 25-30 tomorrow/today (time zone). Have sausage, (no temple meat, hard to find in Sonoma Co. Ca.) and a ton of pork belly. Has anyone used pork belly in their Jambalaya?

I would think it would be too fatty and an odd texture for jambalaya. Use pork butt cubed up, try to cut it to leave a little piece of fat on as many pieces as possible. Some people use boneless pork chops, but I find that cut too lean.

I think it could work if you cut it really small and get a good sear/fry on it.

I have used bacon in the past... and always use Tasso my jams.

Go to the grocery store and buy a Boston butt. I would not put pork belly in a jambalaya, it will be to greasy.

Thanks for the info. Pork belly back into the freezer. Gonna go bu the Pork Butt.

I've use pork belly before and the jambalaya was one of the best I've ever made. That said it was pork belly I had previously smoked. I also cubed it into really small pieces and pan fried it first to get a good sear and cook out some of the extra grease. I would only use pork belly again if I followed the same process.

just wanted to say i did almost this exact same thing and my jambalaya was absolutely delicious. i think pork belly is a much better option than buying a whole shoulder.

i picked this up for $1.79



cut it into small cubes and tossed it in a hot dutch oven along with a leftover fried chicken breast from publix and a pound of andouille and chopped up the trinity and added after i had scraped the pot for about 20 minutes.

because all the meat was already cooked there was no guessing; just dumped everything in and voila.

came out perfectly; not greasy in the slightest and the little pork belly cubes were delicious.

Not always. I've bought country ribs before when I planned to buy the whole butt just because it was cheaper.

Sometimes, I add cubed ham steak that I've browned along with the other meats as an extender. Works well.
