Pork belly burnt ends-slab or cube?

How do y’all do them? Smoke the slab, then cube or cube first ala MeatChurch?

Any interesting sauce ideas?

I have never done them but my buddy has done it both ways and says to cube them because each piece renders evenly vs the way it would render if left whole.
I asked the same question to him when I first tried his.
It does make sense.

I cube first. Put the slab in the freezer for a bit to stiffen it up to make it easier to cube.

Definitely cube first. They'll cook faster for one, get rub on all 6 sides before smoking and they will all render evenly. Put them on a wire rack for smoking. Easier to take on and off.

Used to cube but it’s time consuming. Strips for me and then slice when it’s time to serve.

What do you do with all the extra time you gain by cubing them after instead of before?

I’m team cube. Even cooking and more exposed surface area.

Microwave, nice try. I don't mind spending time, but if you can make an end product that is just as satisfactory in less time it is about efficiency. I don' really make super saucy burn ends anymore either. I'm only slicing/cubing a finished product.

So you just serve them just developing the nice bark? After you cube do you put them on the grill for a bit?

Just pulled the cubes off the initial smoke. They are awesome even without sauce.
