Wash the rings under cold water to remove the sugars to prevent burning

Batter is a powder mixed with milk. Different from the chicken. Powder could possibly be seasoned flour, maybe some corn meal? Maybe some baking soda or powder. Not sure. That recipe is likely the key, so tinker with it. Ditch the eggs

Batter/flour/batter/flour. Fry at 340 for 2 minutes, flipping at 1 minute

None of us really know but the thing that made the biggest difference for me was actually the amount of oil. I once fried some in the turkey fryer after the Thanksgiving turkey and it was very close in texture. Not sure if it's the peanut oil, the amount of space they had to do their own thing, etc

The one I saw was an old short segment that was on one of the Food Networks shows. I had it on my old computer.They showed the spices in the guy's hand, the tumbler marinater and the chicken sitting overnight in the cooler. You got a good shot of the battering and the breading.

Why try to make your own Popeys?
Its much better to drive thru or pick it up without the hassle.

I learned this a long time ago.
