Why are they there? I know they slow the flow, is it a law?

In some Latin American countries they are there to stop the locals from watering down the booze for us gringos.

Makes it easier to meter/standardize your pours, so you don’t need a shot glass every time.

I count to ten. It's a nice round number.

Depending on the day I’ve had and the night upcoming, mine are usually 6-8. 20 cup loaded with ice.

I bought a bottle of Deep Eddy once (no plastic thing) and thought I could just eyeball it. 2 things happened: 1) it didn’t last long and 2) I got lit!

That’s when i discovered a tall shot is about a 6-7 count.

measure the pour... if there's one thing I've learned over the last 5 years working in it, they don't do anything without a purpose 99% of the time. There is a reason for everything they do
