You spent multiple pages arguing with someone bc of a rogue comment that another poster made.

WSM will put out a much better smoked product than a barrel. Whether one wants to spend the few minutes tinkering for the superior result is something only the person cooking can answer.

I'll admit to not just letting it go, but this thread is what it is because whatever his name is said something stupid, then Mr Weekend BBQ competition guy came to his aid.

Just curious about the PBC, can a drip pan be added to catch the oils from the food is dripping on the coals and causing a greasy flavor?

No, not unless you can find a way to modify it.

I rigged up something. It worked but it was cumbersome.

Here's what I did. Try to visualize this if you can.

I took a 17 inch charcoal grate and 3 long stainless steel bolts (If I had used longer ones it would've worked better).

Fasten the bolts on the perimeter of the charcoal grate, 1 up front 2 in back so it'll stand on the three bolts.

The bolts have to be long enough so the charcoal grate sits higher than the charcoal basket.

Once you have the charcoal grate set up, you can put a pizza stone on it to act like a heat diffuser. You can also put a drip pan on it to catch all that grease.

Sort of like what you would see in a kamado.

You want to build something like this.

Like I said, it would've worked better had I used longer bolts. Mine would fit over the charcoal basket but I didn't leave much clearance and it was just sorta clutzy. But it did work.


ETA: It was a 17 or 18 inch grate I used. It forget which. Just make sure the bolts clear the outside diameter of the charcoal basket.

You know now that I think about though, modifying it to accommodate a drip pan would be pretty easy to do with a drill and those bits that drill through steel (they're cone shaped, I forget what they're called).

Just drill three holes above the highest point of the charcoal basket, insert 3 stainless steel bolts just long enough to support a diffuser or drip pan and voila.

You'll just have to make sure the holes are sealed well when you're done so you don't leak air and the bolts can't get in the way of pulling out the charcoal basket.
