to me that looks and tastes like melted american cheese mixed w/ pimentos, onion and hot sauce.

while I'm sure that is quite delicious, melting the cheese over the burger is kinda cheating, the melted cheese acts as the binder

if we are talking about the classic pimento cheese sandwich, it needs mayo as a binder, or you just have dry, seasoned cheddar. You need something to make it a "spread"

You do know that a person can grate CHEDDAR cheese in his kitchen for the intended purpose of making a batch of pimento cheese spread.

yeah I guess that is cheating .. or at least it's not a traditional PC

Pepperjack or extra sharp cheddar is WAY better IMO.

I use the other stuff, plus a little bit of mayo in mine. My mom makes it the same way but adds finely chopped pecans to hers
