true homemade pimento cheese should include American cheese, pimento, onion, hot sauce, worchestershire sauce.

I really think it a texture thing with me. Same reason I don't eat steak or Jello-Doesn't feel right in my mouth.

not a requirement by any means. everybody has their own spin on it. just pointing out it's not mayo + cream cheese.

your recipe seems kinda dry though

what is the binder? I've never had pimento cheese without at least some mayo.

I think most all pimiento cheese has mayo in it. Certainly more than have wostershire.
