My thoughts exactly as JC introduced many Americans to sophisticated French cooking. Outgoing personality, unique dialect, a giant of a woman, as you couldn't help but watch her cooking shows on tv.
In a similar fashion, PP was able to take traditional Cajun and Creole cooking recipes & techniques and share them with people around the World. Prior to PP gaining notoriety, chefs and/or restaurants in Nashville, Boston, St. Louis, Miami, etc.... never served jambalaya, corn machoux, or duck andouille tasso gumbo on the menu.
IMO, Prudhomme is the most influential South LA chef of our generation. He didn't have to create a chocolate mousse frozen with liquid nitrogen to become famous. He just used 2 day old french bread with a mixture of chantilly cream and taught people how to make bread pudding

Justin Wilson was a humorist/comedian who also happened to cook.
And, as much as he's hated by some, Moon did a lot for the city. Like drag it into the 20th Century.

I was a fan of Justin Wilson's comedy when I was a kid in the 60s. My dad would travel around the state and bring back Justin Wilson LPs. That's how you listened to comedy back then. (Had a Bill Cosby one, too.) We had about 5 or 6 of them.
At 10 yrs old, I finally got to see him perform live at an exposition when the Rivergate in New Orleans opened in 1968. It was a small group, maybe 30 to 40 people in the audience, because he wasn't well known back then.
I didn't know anything about his cooking until his TV show started. Anybody know what year that was? I'm sure his show must have predated Prudhomme's which started in 1995, but as for cooking, I'm not sure JW should have even been called a chef, though he often was. I don't think he ever cooked professionally (except for his shows and cookbooks).
JW may have been first on TV, but it was a local show only at first and only went national after Prudhomme made Cajun food take off. He did not popularize Cajun food to America. Chef Paul did. I just don't think the 2 guys are comparable. Hell, JW wasn't even a Cajun and his accent was ridiculous.

Justin Wilson was just a comedian that cooked and really if you go back and watch some because they are still on KPBN-113 Baton Rouge, you will shudder at most of them. He was a trip though.
I liked Earl Peyroux back then. He cooked some good stuff.
And Don's Seafood had crawfish bisque, étouffée and stew in BR, Lafayette and Beaumont from the early 60's at least. And Piccadilly Cafeteria had the best crawfish étouffée around al the way back into the 50's in BR.
Not to take anything away from Paul Prudhomme though. He put the cuisine on the international map and as I have said was a great ambassador for the state of Louisiana.

While looking for info on Justin Wilson I found out that he once appeared on "The Ed Sullivan Show". I certainly did not know that. That's something to hang your hat on there.

Justin was a good guy as well, He once appeared on Johnny Carson as well. Drank a few beers with him one day many year ago.
His mom was Cajun french and that where he learned to cook, But he would be the first to tell you he wasn't a chef, just someone who loved to cook.
